Exclusive Dish: Chicken Tortilla Soup at Los Tres Magueyes

A perennial beloved spot for many locals, Los Tres Magueyes once again has earned top honors from the readers of Cary Magazine for Best Mexican food. The restaurant has won the Maggy Award each year since 2007.

Known for its fast, reliable service and flavorsome fajitas, burritos and quesadillas, Los Tres also serves up a wicked-good house specialty, chicken tortilla soup.

Chock-full of savory chicken, fresh avocado slices, cilantro and cheese, this kicked-up soup will delight your palate and warm your soul.

“It is really filling and delicious, and it’s a great soup to eat any time of year,” said general manager Enrique Torres of the Morrisville Los Tres location, who hails from Jalisco, Mexico.

At $7.50, the soup is served up in a colossal portion that’s easily shareable. Be forewarned, though: It’s so good you may want to eat the whole bowlful yourself.  

The good folks at Los Tres Magueyes were kind enough to give us insight into most of the ingredients found in the soup, but the exact formula remains undisclosed.

The recipe included here is the best approximation we could gather based on taste and online research. Prepare to tantalize your taste buds!


Chicken Tortilla Soup

Yield:  6 servings

3 teaspoons vegetable oil, divided
2 garlic cloves, minced
1 cup diced tomatoes with liquid
4 teaspoons chili powder
10 cups chicken broth
Salt and pepper to taste
3 corn tortillas, cut into thin strips
4 cups shredded chicken
1 avocado, thinly sliced
2 ounces Monterey Jack cheese
1/4 cup fresh cilantro leaves
1 scallion, thinly sliced
Lime wedges, for serving

In a large pot, heat 1 teaspoon oil over medium-high heat. Add garlic and cook for 30 seconds. Add diced tomatoes, including liquid, and chili powder. Cook until virtually all liquid evaporates. Add broth and bring to a boil. Season with salt and pepper to taste.
Preheat oven to 400 degrees F. On a baking sheet, mix tortilla strips with 2 teaspoons oil. Bake for about 8 minutes until crisp and golden, flipping halfway through.
Distribute chicken, avocado, cilantro, cheese and scallion into six bowls. Top with broth and tortilla strips. Serve with lime wedges and enjoy.
