Recipe: Pulled Pork for a July Fourth Party

Even with social distancing guidelines in place, there’s no reason you can’t have a bang-up July Fourth party. People are hosting smaller events, and the folks at the Fresh Market are making it easy to get together with friends.

“The Fresh Market’s complete holiday meals have been more popular than ever in the past few months as people look for ways to celebrate at home with family or a small gathering of friends,” said Nicole Chabot, communications manager for the specialty grocery store.

For the Fourth of July, customers can order a barbecue meal, with enough food to feed eight people. Online orders will be accepted until 2 p.m. Tuesday, June 30, and picked up in-store July 2-5.

Along with the watermelon and apple pie, a boneless Boston pork butt is included in the box. But no worries, even if you don’t own a grill, barbecue goodness can be yours.

Here are a couple of ways to cook that hunk of meat:

Slow Cooker Pulled Pork

One of the easiest ways to prepare enough pulled pork for a crowd, is to throw it in your slow cooker.

  • 7- to 8-pound boneless Boston butt
  • Kosher salt and freshly ground black pepper
  • ¼ cup extra virgin olive oil
  • 2 12-ounce bottles barbecue sauce

Remove netting and cut pork into 3 equal-sized pieces. Season pork liberally on all sides with salt and pepper. In a large skillet or Dutch oven, add oil and heat over medium high heat until it shimmers. Add pork and brown on all sides, 1-2 minutes per side. This can be done in batches if needed. Transfer pork to a 6-quart or larger slow cooker. Cover and cook on high for 4-6 hours or until pork reaches an internal temperature of 200 degrees F.

1 to 2 hours before pork is finished, remove pork and drain off the excess liquids. Add 1 bottle of sauce and continue cooking.

Remove pork and place in a dish large enough to pull the meat. Shred meat toss with remaining sauce and serve.

Oven-baked Pulled Pork

  • 7- to 8-pound boneless Boston butt
  • Kosher salt and freshly ground black pepper
  • 1-2 12-ounce bottles barbecue sauce

Preheat oven to 425 degrees F.

Remove netting and cut pork into 3 equal-sized pieces. Place pork in a large baking dish (with deep sides) or Dutch oven. Season pork liberally on all sides with salt and pepper and place in middle rack of oven for 45 minutes until pork is deeply browned.

Reduce temperature to 325 degrees F. Cover with foil or lid and bake for about 3 hours, or until the pork reaches an internal temperature of 200 degrees F.

Remove pork from oven and allow to rest 30 -45 minutes. Shred meat, toss with barbecue sauce and serve.
