Since its first batch in late December of 2022, Edit Beer Co. has created 85 different brews (with roughly 10, including this hazy IPA, named after Pearl Jam lyrics).
“We’ve found tons of examples of hazy that we like, but I don’t know that I’ve ever found one where I don’t want to make another very small change to the beer to make something different the next time,” head brewer and co-founder Brian Johnson says, simultaneously reflecting the origin of this brew and Edit’s overall philosophy.
“For a hazy IPA, we have a rough sketch of what we do each time. There are certain ingredients that go into it every time,” Brian explains. “There’s always a lot of wheat. There’s always a lot of chit malt. We’re always throwing in a lot of flaked grains too, and maybe some type of dextrin product to emphasize mouthfeel, because we really want something that has a really nice texture to it to support all the hops we throw in.”
Four hop varieties lend flavors of pineapple, mango, stone fruit, and citrus to this iteration.

“We opened this brewery with two young children by our side, so we really wanted to have a place where people like us could hang out,” Brian says.
