“This cocktail is really approachable” says Ashley Malinowski, vice president of food & beverage for Early Bird Night Owl, the hospitality team behind Lloyd’s. “It’s light and refreshing, and it makes for a great patio drink.”
½ ounce gin, ideally a cucumber-forward or more botanical style
¾ ounce fresh lime juice
just over ½ ounce agave syrup
pinch of Maldon sea salt
Add gin, lime juice, agave syrup, and Maldon salt to a shaker with ice. Shake well and strain over fresh ice. Garnish with Tajin-dusted cucumber ribbon.
For agave syrup: Combine equal parts blue agave and hot water. Stir until fully incorporated and allow to cool before use.
