Maximillians Grill & Wine Bar has anchored Cary’s dining scene since 1991, now helmed by chef-owner Margie Hennessee and her husband Will. The cozy, full-service dining room leans into home-spun hospitality while channeling global flavors through a farm-to-table lens, thanks to partnerships with North Carolina farmers, fisherfolk, and artisans.
The Fall 2025 menu celebrates the season with sociable plates such as crispy sesame calamari in a General Tso glaze and PEI mussels with charred lemon, leading into signature entrées. Guests return for the Korean BBQ Beef with sweet rice and papaya slaw, the ever-changing Voodoo of the Day featuring the catch served over mahogany fire noodles, and comfort favorites like Homage to the Pig with slow braised pork cheeks or Bell & Evans Chicken paired with burrata-laced rigatoni.
An extensive wine and cocktail program curated by Will Hennessee fuels regular wine dinners, while the bar pours a deep list by the glass alongside local drafts.
