Brian Fitzgerald – Executive Chef and Owner, Academy Street Bistro

Been there: 8 months; previously executive sous chef at the Harvard Club in New York.

Cuisine style: New American — classic American with French and Italian twists.

Loves about Academy Street: The three sections of the space: bar and  lounge, main dining room and patio. You can be comfortable, casual and upscale all in one place.

Where he eats: Coquette Brasserie, Raleigh

Admires: The ambiance really does feel like you are in France. It’s a true French bistro down to the floors.

Memorable: The food absolutely reminds me of being in France.

What to order: Escargots, Moules Frites (mussels and fries), and Pan Seared Foie Gras.

Centrally located in Raleigh’s North Hills, a visit to Coquette Brasserie doubles as an escape to France.
